This is probably the best soup in the world! I love this soup. I could eat it every single day. Unfortunately one out of the four of us (Vincent) doesn’t like it as much, so although I could eat it daily, I only get to have it maybe once a week. I think part of the reason it is so good are the peas here in India. They are very crisp; they burst when you bite into them.
Here are the ingredients:
- 1 lb zucchini
- 2 garlic cloves
- parmesean cheese
- 2 bouillon cubes
- extra virgin olive oil
- 3 1/2 fresh or frozen peas
- fresh basil leaves
Chop up your zucchini and garlic. Grate some parmesean. Tear the basil leaves. And dissolve the buillon cubes in 3 cups boiling water.
Heat 2 tbsps olive oil and fry the garlic. Add the zucchini and cook until soft. Add half the peas, stir, and then add have the bouillon. Cook until the peas are tender. Puree this bit.
Bring the remaining peas to boil in the rest of the bouillon water and cook for 5 minutes. Scoop out the peas with a slotted spoon and stir into the soup. Add a little bouillon if needed to the soup.
Serve the soup topped with shredded parmesean and torn basil leaves. Season with fresh ground pepper.
