Do you love pumpkin pie? Or do you love pecan pie? Or do you end up going for both because they’re both so good! If that’s the case, and you’d like the two in one, you gotta try these pumpkin bars. They are the PERFECT mix of both Thanksgiving favorites: pumpkin pie and pecan pie!
Oat Crust
- 2 cups old-fashioned oats
- 1 cup all purpose flour
- 1/2 cup butter, melted
- 1/2 cup firmly packed light brown sugar
- 1/8 tsp salt
Preheat the oven to 350 F. Mix the above ingredients and firmly press into an even layer in a 13 x 9 inch pan. Bake for 15 minutes.
Pumpkin Filling
- 1 can pumkin puree (15 oz)
- 1 can sweetened condensed milk (14 oz)
- 2 large eggs
- 1 1/2 tsp ground cinnamon
Mix all the above ingredients well and pour over the baked crust. Bake for 20 minutes.
Brown Sugar Topping
- 2 tbs butter, softened
- 1/2 cup finely chopped pecans or walnuts
- 1/2 cup firmly packed dark brown sugar
Mix the above ingredients and sprinkle over the filling. Bake for 20 minutes more.
Cool completely (which is really hard—you want to try them) before cutting into bars.
